So, why raw vegan food? Why not cook it. Well, raw foods are complete. They represent unbroken wholeness. And, hey, if it’s not broke, don’t fix it!! Living or raw foods are ‘unbroken’…. They haven’t been cooked; they haven’t been processed; they haven’t been ‘pesticided’; and they haven’t been ‘herbicided’. Raw foods just are…. raw foods are complete. As intended for maximum benefit for your body cells. Cooking destroys the ecological balance of food. It makes 80% of protein unavailable. It destroys 60-70% of vitamins, up to 96% of B12 and 100% of immune system boosters – those little fellas are called ‘phytonutrients’. A big word for little organisms that have such an important function.
Cooking also destroys enzymes in any food. And we need enzymes. Body enzymes can be converted and used for detoxification, repair and healing. So preserving enzymes by eating food raw seems to play an important role in slowing the aging process. The experiments are clear: rapid premature death in rats fed a diet of cooked food; and rats eating raw food living 50% longer. And this statistic can be applied to humans.
